Steamed zucchini weaved filet of sea bass, sweet and sour vegetables, veal jus. With Diana Raeva
1 sea bass fillet 300 g
1 Zucchini
1 Asparagus
1 Red onion
1 Strip of celery
Half white potato
For the marinated vegetables
3 dl white wine
3 dl of water
3 dl white wine vinegar
50 g sugar
20 ml brown stock or veal sauce
Extra Virgin Olive Oil
Salt and pepper q.b.
A knob of butter
Prepare the zucchini weave by cutting it lengthwise with a potato peeler obtaining very fine strips. Weave the strips as photography shows and wrap the
fillet of sea bass after having sprinkled with olive oil and seasoned with salt and pepper.
For vegetables, cut the potato in cubes, the asparagus in strips, celery in sticks and onion into four pieces .
In a saucepan, stir together the wine , vinegar , water , sugar , salt and pepper and bring to the boiling point. Add the chopped vegetables ,
turn off the heat and leave until cool .
Place the fish in a colander , close the top with the film , creating a transparent cap . Bring a pot of water to a boil and place the colander on top for 8 minutes.
This will allow you to steam the sea bass.
In a pan , over high heat , add a knob of butter and hop the vegetables emulsifying with a tablespoon of water.
Place the sea bass in the middle of the plate, the vegetables all around with the veal sauce and a little olive oil.
The dish is served !
Branzino in rete di zucchine al vapore, vegetali al carpione e salsa di vitello
1 Filetto di branzino 300 g
1 Zucchina
1 Asparago
1 Cipolla rossa
1 Stecca di sedano
1/2 Patata bianca
Per le verdure al carpione
3 dl di vino bianco
3 dl di acqua
3 dl aceto di vino bianco
50 g zucchero
20 ml di fondo bruno o salsa di vitello
Olio Extra Vergine di Oliva
Sale e pepe q.b.
Una noce di burro
Preparare la rete di zucchina tagliandola longitudinalmente con un pela patate ricavando delle strisce finissime. Intrecciatele come da fotografia e avvolgeteci il
filetto di branzino dopo averlo irrorato con olio e condito con sale e pepe.
Per le verdure, taglare la patata a cubetti, l’asparago a strisce, il sedano a listarelle e la cipolla in quattro pezzi.
In un pentolino mescolare assieme il vino, l’aceto, l’acqua, lo zucchero, sale e pepe e portare a bollizione. Aggingere le verdure tagliate,
spengere la fiamma e lasciare fino a raffreddamento.
Ponete il pesce in uno scola pasta, chiudete la parte superiore con la pellicola creando un tappo trasparente. Porate ad ebollizione una pentola d’acqua e poneteci
sopra il cola pasta con il pesce per 8 minuti. Questo vi permettera’ di cuocere il branzino a vapore.
In una padella, a fiamma alta, aggiungete una noce di burro e saltateci i vegetali al carpione emulsionando con un cucchiaio di acqua.
Ponete al centro del piatto il branzino, le verdure tutte intorno e nappate con la salsa di vitello e un po’ di olio.
Il piatto e’ servito !
