The other night, with intense cold in New York, I thought of the sea, the sun, the beach. It came up a bit of nostalgia of the years spent in Dubai, where every single day you were kissed by the sun with summer temperatures all day long. I thought of a glass of Franciacorta with a nice swordfish carpaccio. My friend Alina had just finished her lessons at university and on her way home, the Romanian transplanted in NYC for years now, stopped by for a jump in the kitchen. Another beautiful friend with passion and love for food !
Oggi vi proponiamo una ricetta salva tempo, di quelle che puoi preparare anche all’ultimissimo minuto e sei sicuro del risultato. Pochi ingredienti, l’importante è che la materia prima sia freschissima.
Swordfish carpaccio, orange zests, fennel, pine-nuts and citrus dressing
80 g swordfish loin
1/2 Orange
2 g pine-nuts
1/2 fennel
1 Lemon
Tomato concasse
Mixed leaves
Oil, Salt and pepper
Peel an orange. Use half of it. Cut the ends off a seedless orange just far enough to expose the flesh. Place orange cut end down and cut away the peel. Cut away as little of the peel as possible by following the orange’s shape. Using a sharp knife cut along the inside of the membranes that separate the orange segments. Slice only down to the center of the orange. Continue around entire orange cutting out each section, leaving the membrane. To make the dressing, squeeze the rest of the orange and one lemon together and with a whisk mix with extra virgin olive oil adding salt and pepper. Clean up a fennel bulb and slice it finely. Mix it with leaves and dress it up with salt, pepper and the citrus dressing.Toast the pine-nuts with a pan on a high flame for 2 minutes. In the end chop the tomatoes in small cubes.
Slice thinly the swordfish and place it onto a plate. Season it with salt and pepper and a drizzle of the dressing. Top it with the fennel and mix leaves, pine-nuts, tomato concasse and the orange segments. Ready to serve.
Carpaccio di pesce spada, spicchi di arancia, pinoli tostati e crudo di finocchio
80 g Pesce spada
1/2 Arancio
2 g pinoli
1/2 Finocchio
1 Limone
Tomato concasse
Qualche foglia di misticanza
Olio extra vergine
Sale e Pepe
Con l’aiuto di un coltellino affilato, tagliate via la buccia dell’arancia seguendo la sua sagoma, cercando di non lasciare nessun residuo bianco sulla polpa e di scartarne, allo stesso tempo, il meno possibile. Ponete al di sotto di essa un piatto fondo o una ciotola che raccolga il succo e la polpa, quindi con un coltellino affilato, incidete gli spicchi lungo la parte interna della membrana che li separa. Tagliate gli spicchi a meta’ e tenete da parte. Spremete il resto dell’arancia con un limone, aggiungete sale e pepe quanto basta e con l’aiuto di una frusta sbattete il succo aggiungendo a filo l’olio extra vergine fino a raggiungere una salsa densa (citronette). Pulire una testa di finocchio e tagliare alcune fettine sottili con l’aiuto di un coltello e condite con sale, pepe e la citronette aggiungendo qualche foglia di misticanza. Tostare i pinoli su una pentola a fuoco vivace per 2 minuti. Tagliare a cubetti il pomodoro.
Ricavate delle fette sottili di pesce spada e ponete su un piatto. Condire con la citronette, aggiungere l’arancia, i pinoli, il pomodoro ed infine l’insalatina di finocchio. Il piatto e’ pronto per essere servito.
